Carrot Cake and recipe books

So last Friday, I made a Carrot Cake at work, this was the recipe I found:

It was rather delicious, at the request of my co-workers it wasn't iced which I previously would have been shocked at but it turned out lovely all the same. I didn't add nuts, feeding 10-12 people means the fussiness rating goes right up! I don't believe in pineapples, for eating anyways, but it turned out quite moist I felt. It could have had a little more spice to it though I did add a pinch of nutmeg as well, I searched some fifteen carrot cake recipes and took a little from here and a little from there, oh! I also used brown sugar with a little vanilla sugar - because I couldn't find vanilla extract, shopping in Holland is quite stressful! Anyways, all in all a very nice recipe, definitely one to add to the collection.

I have a student recipe book called Classic 1000 Student Recipes and it's absolutely fab and I looked it up the other day on amazon to tell my friend to get it and what do you know? It's part of a whole series, one of which is Classic 1000 Cakes, it's going to be my new friend! It has the most delicious looking black forest gateau on the front which is simply calling out to me...
